Blueberry & Banana Muffins

I've recently started cooking & baking again, mainly to vary the meals & snacks that I eat. Whilst searching on line I came across a 'healthy' breakfast muffin. I've taken the base mixture from this recipe, tweaked it & then added a couple of my own ingredients to suit my own tastes. I'm hoping some of you out there might enjoy these muffins as much as I do - without feeling too guilty - I don't!! :-)

250g self raising wholemeal flour
1tspn baking powder
100g porridge oats
1tbsp poppy seeds (optional)
50g unflavoured protein powder
200ml skimmed milk
2 eggs
100ml honey
3 tbsp oil (I use flora cuisine)
3 very ripe bananas
1tspn vanilla essence
1 punnett of blueberries

Sieve the flour, baking powder & protein powder together into a mixing bowl & then add the oats & poppy seeds & mix together.

Beat the eggs & then add them to the honey, milk & oil in a jug & mix together.

Pour the egg/honey/oil/milk mixture into the flour & oats and mix in.

Mash the bananas with the vanilla essence in a bowl.

Fold the bananas into the mix & then add the blueberries.

Pour the mixture into muffin cases & sprinkle oats on top.

Bake in the oven at approx 180C (160C fan) for 20 - 25 mins (I've yet to bake them for less than 25mins)

The recipe makes 12 muffins.

Nutrition info/muffin: 195 cals, 25g cabs, 3g fat, 7g protein

The protein powder is optional & you can add either 50g more oats or flour in its place.

I've also made a dark chocolate version. Swap the blueberries for 30g - 50g dark chocolate, chopped into small pieces. This adds about 1g/1.5g of fat to each muffin.
