Make ahead meals/Freezer meals

Anyone do this? I am looking for some new ideas. I prefer stuff I can prepare and freeze individually for convenience and portion control, no casseroles or anything like that.

I already make
White Chicken Chili
Traditional Beef or Turkey Chili
Burritos
Turkey Meatloafs made in my muffin pan

Anyone have any other ideas? Maybe even something you haven't tried but want to or something you think might work well? I don't have any time to prepare lunch or dinner on the days I work due to long shifts (and eat both at work) so I need something that I can make a lot of a freeze ahead of time. I try and stay away from processed lean cuisines as much as possible.

    I like making crockpot steel cut oatmeal and freezing it in small portions.

    eggbeaters with mushrooms & broccoli in muffin tins and frozen in a large tupperware container with wax paper between layers

    veggie soup - cabbage, green beans, diced tomatoes, onions, carrots, corn

    I always have pre-cooked grilled chicken breast, turkey burgers and black bean burgers in the freezer to throw in my lunch bag

    I also pre-bag broccoli in steamer bags in lunch-size portions. Again, easy to grab and it keeps other lunch items in my lunchbag cold until I am ready to cook it.

    I like the turkey burger idea. How is the chicken breast after its been frozen? I heard anything that isn't ground doesn't hold up too well. I make chicken in the crockpot usually once a week and shredded it, it would be awesome it that would freeze well. I've been wanting to egg/veggie muffins though, thanks for reminding me :)
