Yummy Chicken Tortilla Soup

I was craving chicken tortilla soup yesterday but had a hard time finding a lower cal version so I created my own with what I had in the kitchen. You should check it out!

216 calories per 1 1/2 cup serving (without toppings)

    STILL NOT THERE!

    Here it is:

    1 lb Chicken breast, cubed
    4 cups chicken broth
    2 cups water
    2 tbsp chicken buillon (optional)
    1 can diced tomatoes (with juice)
    1 can black beans, drained and rinsed
    1 tbsp chili powder
    1 tbsp cumin
    3 tbsp garlic powder
    1 can whole kernel corn, drained
    1 can rotel (tomatoes and green chilis)
    3/4 tsp salt
    1/2 cup diced onion
    1 can (8 oz) tomato sauce

    Pour chicken broth, add water and bullion, chili powder, garlic powder and cumin into the pan and begin to bring to a boil. Add cubed chicken breast and cook about 20 min. Add all other ingredients, stir and simmer for about 30 min.

    Optional toppings: homemade tortilla strips, sour cream, chopped cilantro and pepper jack cheese.

    Homemade tortilla strips (36 calories for 1/2 tortilla)
    6 corn tortillas and olive oil.
    Brush each tortilla with olive oil and stack. Use a pizza cutter to cut into strips and place on a baking sheet. Place in oven until they are golden brown. Sprinkle with chili powder and salt and they are ready to go.

    I was looking for a chicken tortilla soup recipe because I love the Panera version I found in a container at my local grocery store - it is a low fat version and yummy, but expensive.
