190 cal creamy coronation chicken (easy)

I've been making this for years, it's extremely filling and is usually eaten cold in a big leafy salad or as a sandwich/wrap filler. It also tastes great warmed served over some wholewheat pasta or with cooked rice and vegetables as a warming meal.

The main ingredient swap: ditch the usual base of mayo or cream and sub with Greek yoghurt which is very healthy anyway. I use normal Greek yoghurt, not the fat free type as I find it doesnt hold together as nicely or taste as creamy.

This should be about enough to make 3 very large salad servings (I use a whole 100g bag of Italian style mixed salad leaves) or 5 ample sandwich 'fillingfuls' (nice in wholemeal pitta, wraps etc with some lettuce and tomato):

1 tbsp Low Fat Mayo
4 heaped tbsp Greek yoghurt (I used the full-fat version which is a lot creamier, but do feel free to use fat-free)
1 heaped tbsp Mango Chutney
200g - 250g (or 2 average fillets) cooked & sliced/cubed chicken breast
1 tbsp chopped sring onions/scallions
1 tbsp Curry powder,
1 tsp black pepper

Mix all ingredients together. It's best left covered and in the fridge overnight for the flavours to properly infuse.

Add salt or a small squeeze of lemon juice if you think it needs it.

Optional nice things to add: thin slices of fresh apple, halved grapes, cubed mango, sliced apricots, sultanas/raisins to make it fruitier, or chopped celery, red or yellow pepper, sliced chillies, toasted almonds, cashews, pine nuts, peanuts, cooked peas etc etc for more texture.....the list is endless.

Per Serving (using a 3rd of the chicken salad and not with any of the added extras):

190 Calories
8g Fat

NB: Mixed in with an entire bag of salad leaves, this meal still comes in at under 250 cals. I love it.

    Basically a creamy curried chicken. Usually used as a sandich filling or in a salad.

    All you need to make it "curried" is a bit of generic curry powder. (I use medium)

    To make it slightly sweeter and richer, mango chutney is added.

    To make it creamy, use normal Greek yoghurt.

    I have made it...it's marinating...I didn't have the chutney so I used 1.5 tsp of marmalade.
    The creamy dressing is delicious Eebee!
