So I was browsing the skinnytaste.com website and came across her pineapple zucchini muffins. So after staring at it for awhile I was able to sort of create my own recipe based off of hers.
I just made them like 20 minutes ago and oh my goodness they are so delicious!!!! I feel like I'm eating something that should be way more calories!
What You'll Need:
3/4 cup all purpose flour
3/4 cup whole wheat flour
1 cup granulated sugar
2 tsp baking soda
1 tsp salt
1/4 tsp nutmeg
Dash of ginger
2 tbsp Vegetable Oil
2 large eggs
1 tsp vanilla
1 cup shredded zucchini
1/2 cup applesauce
4 tbsp mini chocolate chips (I used Nestle)
I always mix dry ingredients first and make sure they are sifted together. Then I add the wet ingredients and mix well.
I grease my muffin pan and fill it up. Now I did 12 muffins but if you wanted to make slightly smaller ones you could. You could make it into like 18 small muffins and those would be 117 calories each.
Bake at 350 for 25 minutes. At about 20 minutes check them with a toothpick to make sure they aren't already done. Every oven is different.
