Ghetto Fab Tofu and Blueberries in sweet miso sauce
This unusual dish is the result of tinkering with Miso reduction sauces trying to create a new, sweet miso sauce with lots of flavor. After getting the sweetness about right, I found that I then was craving a contrasting flavor in the dish. For some reason Fresh tart Blueberries came to mind. I know what you're thinking. "Really? Blueberries and tofu?" You have got to try this combination to get the full effect of its unusual personality. Its Ghetto Fab!
Whole Foods 365 Organic - Extra Firm Tofu, 1 block
Generic - Orzo (Pre-Cooked), 1 cup
Generic - Long Grain Brown Rice (Pre-Cooked), 2 cup cooked
Generic - Spinach Sauteed (Pre cooked), 1/2 cup
Correct - Bell Pepper Red (pre Cooked) , 74 g (1 medium)
Hikarimiso - Miso Paste, 3 tablespoon
Kikkoman - Rice Vinegar, 2 tbsp
House of Tsang - Pure Sesame Seed Oil, 1 tsp.
Water - Municipal, 0.5 cup (8 fl oz)
Organic Nectars - Agave Syrup - Raw Premium Dark , 3 teaspoon
Berrio - Extra Virgin Olive Oil, 1.5 Tbsp (15ml)
Kikkoman - Lite Soy Sauce, 1 Tbsp (15 mL)
Napa Valley Naturals - Organic Red Wine Vinegar, Oak Aged, 1 Tbsp (14g)
Organic - Blueberries, Raw, 1 cup 80

I love blueberries, and I've been considering adding tofu to my diet. I'll have to give this a try. It's more complicated than I prefer ... I like easy to prepare meals. Thanks for sharing! :drinker:0

One quick tip for preparing food ahead of time for the week: We make 10-15 cups of rice at a time for the week, then divide into 1 cup ziplock bag servings squeeze as much air out as possible before sealing and freeze them. We go through a lot of rice so we use it within a week. Microwaving for 2 minutes is usually enough, or you can throw the frozen rice (while in the ziplock) in your steamer for about 5 minutes and it should be hot.
We do the same with Beans, cooked poatatos, squash, etc. That way we can do a bunch of major cooking on our day off (it adds maybe an hour or two- which we can also do other chores at the same time such as house cleaning etc.) Its a huge time saver and lets us make more high maintenance menu items throughout the week.
