    I love these pumpkin cinnamon rolls. I add a little molasses to the glaze to bring out the warm spice flavor.

    pumpkin is so good, love the recipes here. Another thing I did was go off this protein fluff recipe and freeze a can of pumpkin (freeze it in a bag so you can actually get it out), and put it in a food processor with a scoop of protein powder, half a cup of skim milk, 1/6 of a cup of sugar, some cinnamon and nutmeg, blend it until it's creamy, then take it and fluff it with a hand mixer. So thick, creamy and yummy.

    I will occasionally add a can of pumpkin puree to my chili. Doesn't overpower the chili but it adds a rich, velvety texture.

    I put a half cup of the purée in my protein shake with cinnimon a touch of Splenda and its amazing!!!

    AND

    Pumpkin chili:
    1 Pound ground turkey
    1 Small onion, chopped
    1 Clove garlic, minced
    2 Cans diced tomatoes
    1 Can kidney or black beans
    1 Cup pumpkin puree
    1 Tablespoon chili powder, or to taste
    1 Teaspoon cumin, or to taste
    1 or 2 Chipotle peppers
    Black Pepper


    Cook the ground turkey, onion, and garlic together to brown the meat. If you used the turkey, there shouldn't be much fat to skim off, but if there is, go ahead and drain the meat/onion mixture. Return the pan to the heat and add your 'maters, beans, spices, and puree. Mix well and let simmer on low for about 20-30 minutes.

    I love pumpkin!!!

    red chicken soup.

    feeds 6

    cut up 1lb chicken breast
    chop celery, onion, carrots, mushrooms 1 cup each
    in a stock pot saute onions in olive oil
    brown chicken until half down
    and the rest with 2 cup of water
    bring to boil, add 1 can of pumpkin.
    add more water if you need

    You can decide which seasoning you want,
    some like it spicy, some like it salty, other kind of sweet

    Wow this all sounds so good. I know that sweet potatoes are good for you as well. I wonder if you could use sweet potatoes in place of the pumpkin or along with it?

    There is a fantastic cook book called "the looney spoons collection" by sisters Janet and Greta Podleski. The book is full of recipes that are calorie wise and very healthy and most importantly very very delicious. There are 6 recipes in this book with pumpkin:
    1. Pumpkin spice muffins (called pumpkin and spice and everything nice)
    2. Homemade granola bars with pumpkin (GRAINola bars) - have made these, very good
    3. Pumpkin pie pancakes (pimped-out pumpkin pie pancakes)
    4. Carrot cake (must bake carrot cake) - very good (but probably not what you're wanting right now)
    5. Gluten free brownies(Greta's gluen-free miracle brownies)
    6. Pumpkin cheese cake (lovin my no-oven cheesecake)

    The book has all calorie breakdown for each recipe by serving size.
