Mint Meringue Cookies w/ Chocolate Drizzle - 16 calories ea

These were awesome! About the size of a 50 cent piece.
Makes about 60 servings - Per cookie
Calories: 16.........Carbs: 3.........Fiber: 0.........Fat: 0........
.Protein: 0.........Sugar: 3.........Sodium: 3
3 large egg whites
3/4 cup sugar
1/2 teaspoon pure peppermint extract
food coloring
Preheat oven to 175 degrees. Line 2 baking sheets with parchment paper.
Use mixer w/ whisk attachment to beat egg whites until foamy (add food coloring on 1st step). Then slowly add in sugar, and beat until stiff peaks form. Fold in peppermint extract.
Fill a pastry bag with mix, and pipe onto cookie sheets.
Back for 140 minutes or until stiff to the touch and not sticky.
Melt 6 blacks of Hersheys Dark Chocolate Bar (Giant size...or probably about 1 reg. size bar). Drizzle over cookies.
