Baked Oatmeal

Hi have a recipie for baked oatmeal which is really good. But I'm not good at experimenting in the kitchen. I was wondering if anyone has a similar recipie that is healthier, or if anyone can suggest changes to this recepie.


Ingredients
1/2 cup vegetable oil
3/4 cup white sugar
2 eggs
1 cup milk
1/2 teaspoon salt
1 tablespoon baking powder
3 cups quick cooking oats
1/2 cup raisins
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon




Directions
1. Beat together oil and sugar. Mix in eggs, milk, salt, baking powder, oatmeal. Beat well then stir in raisins. Pour into a lightly grease pie pan. Sprinkle with brown sugar and cinnamon. Refrigerate overnight.
2. The next morning, preheat oven to 350 degrees F (175 degrees C).
3. Bake in preheated oven until firm, about 35 minutes. Serve hot.

    Switch the sugar to granulated splenda. Use liquid eggs or egg whites. Use blueberries instead of raisins. Dried fruit is full of sugar.

    I use this one:

    Whatever fruit you want
    1 cup oats
    2 tsp baking powder
    Pinch of salt
    2 tsp cinnamon
    1 egg
    1 cup skim milk
    1/4 cup real maple syrup
    2 tsp vanilla extract

    Lay fruit in bottom of casserole dish, lightly sprayed with Pam. Mix all dry ingredients, spread over fruit. Mix all wet ingredients, por over oats. Bake at 375 for ~30 min until golden on top.

    That's one I like. I usually make a batch and refrigerate it for the week. Just add some frozen blueberries and a dash of coconut milk and pop it in the microwave.

    I would suggest substituting a cup of a vanilla protein shake for the milk.

    This isn't a recipe but this is how I like my oats. I soak a cup or steel cut oats in 4 cups water over night. In the morning I add 1/2 se salt and turn them on and cook and stir occasionally until liquid is incorporated. It takes longer to cook with steel cut oats and with that much water......but I like the final result. I dish the oatmeal into 4 containers and refrigerate to use for breakfasts that week. Each container is about 3/4 cup and 150 calories. Some mornings I add 2 tsp. hazelnut almond butter to the container and microwave for a minute......then top with a sliced banana and a tsp. of maple syrup and a little almond milk (just a little). Other mornings I top with plain yoghurt, strawberry sauce, chopped walnuts and a touch of maple syrup. There are so many ways to add wonderful nutrition and flavours to your oatmeal.

    Baked Oatmeal Recipe


    serves 6-8
    prep: 5 min.
    Cooking time: 40 min.
    Temp: preheat oven to 400 degrees
    Dish: lightly grease 2 quart oven-proof casserole dish

    2 1/2 cups regular rolled oats
    1/4 cup oat bran
    1/4 cup steel cut oats (from health food store-whole oat cut in half)
    2 tsp. baking powder
    1/2 tsp sea salt, optional
    1/2 ground cinnamon
    2 cups milk
    1 egg, beaten
    1/3 cup unsweetened apple sauce
    1/4 cup extra virgin olive oil
    1/4 cup raw honey

    2 cups fresh fruit-chopped apple and whole blueberries

    stir the dry ingredients together in a large bowl.
    Whisk the milk, egg, apple sauce and olive oil together.
    Pour this egg mixture into the dry ingredients, stirring well.
    Turn the whole mixture into the prepared casserole dish.
    Bake uncovered for 20 minutes.
    Remove from the oven and stir in the fresh fruit and bake for additional 20 minutes.

    sometimes I add sugar-free French Vanilla coffee creamer to my oatmeal and microwave it.

    I also make pancakes out of oat groats. Grind 1/2 cup oat groats in coffee grinder. Then add 1/2 tsp baking soda, 2 eggs, 1/2 banana and a sprinkle of walnuts. Add enough water to make a good batter. Cook in skillet. Add remaining 1/2 banana and blueberries and drizzle with Walden Farms Sugar Free Blueberry Syrup. This is a very filling breakfast. I have also made it with microwavable Steel Cut oats.
