Suzy Q with Strawberries
Cake
1 Pillsbury Sugar-Free Devil's Food Cake Mix
8 oz. Greek Yogurt (vanilla)
1 cup water
Icing
1 container Sugar-Free or Lite Cool Whip
1 pkg Sugar-Free/Fat-Free Chocolate Pudding
Filling
2 cups Sugar-Free or Lite Cool Whip
1 pkg Sugar-Free Strawberry Jello
2 tbsp Strawberry Jam
For the cake, mix the greek yogurt in with the cake mix and add water as you mix. Batter will be thick and sticky. Split the batter between 2 9" round cake pans. Bake at 350 for approximately 20-25 minutes. Place on cooling rack and set aside.
Once your cakes are cool, put one of the cakes on a plate. For the center filling, put the Strawberry Jam in a small bowl and heat in the microwave. Heat in short increments of 10 seconds and stir until the jam is a thick liquid. Once a thick liquid, add strawberry jello. Layer the Cool Whip and drizzle the strawberry filling over the Cool Whip. Place the other cake on top and stick in the refridgerator.
For the frosting, take a container of Cool Whip and a package of pudding and mix together. On a completely cooled cake, spread the Cool Whip frosting. Garnish with fresh strawberries.
Makes 14 servings.
