I just had the best dinner and am so proud! lol.

Chicken Milanese with arugula and beet salad

1 boneless chicken breast
1 egg
flour to cover chicken
breadcrumbs with added spices to your liking to cover chicken
1 tb oil
half a lemon
arugula
canned beets


Preheat oven to 425
Place chicken breast in plastic wrap or ziploc and pound til about 1/2in thick.
Cover chicken breast lightly in flour, barely cover
Dip in egg and shake off excess
Dredge in breadcrumbs til covered.
Bake on a cookie sheet for about 10 to 12 minutes, til chicken has no pink.

In a bowl put arugula and a couple beets chopped. Drizzle with the oil (I used vegetable oil because I dont like olive oil). Squeeze a bit of lemon juice and add some salt and pepper....heavier on the pepper. Toss salad.

When chicken is done, plate and top chickedn with the salad.

Delicious!!!!!!!!

When I put in entry it came up at around 400 calories.
