Healthy homemade chinese food recipes?

My biggest weakness (other than chocolate) is chinese food. I have swapped out other things I crave for healthier, homemade options, and need to figure out how to swap out the takeout chinese for some healthy stuff I can make. Does anyone have any recipes to share?

    Options
    Stir fry is the easiest -- lean chicken, lots of veggies -- make a sauce of 1/2 soya sauce and 1/2 rice vinegar (or lemon juice will work too) with some ginger, garlic -- add a little sesame oil or some nuts at the end.

    Stay away form the rice and noodles, and the deep-fried stuff, and you can still do the take-out once in a while...
