just ordered 1/8th of a cow

I just ordered 1/8 of a cow (grass fed)..and I gotta say I'm pretty excited to make the change!!

Any cooking tips? I've read to cook it low and slow...but other than that ?

    We bought this book when we got our 1/4 cow and everything has been great! Definitely cook the steaks much slower or they will be dry and tough.

    We use to buy a quarter from a friend. Best meat we EVER had! We don't do it anymore with just 2 of us and no freezer but i definitely miss it.

    We bought a 1/8th of cow last Fall and still have meat. It is the best burger and roasts I have ever made. The steaks are great also, tender but I have to watch them on the grill, last time I left them they were dripping to much and my grill looked like it was going to start on fire. I guess thats maybe a reason to cook them slower?
