Each serving: 241 calories, 9 carbs, 12 fat, 24 protein, 7 sugar, 1 fiber
Warm eggs in hot water for 5 minutes for better cooking. In a medium size non-stick skillet sprayed with Pam, over medium heat saute mushrooms and sausage. Then add spinach and arugula and sea salt to taste. Cover and let cook for 3-4 mins. Next mix eggs and egg beaters with fork, pour egg mixture evenly over the mixture and cook for a minute or two until the eggs start to set. Then sprinkle with crumbles of chevre style goat cheese. Reduce heat to medium-low and continue to cook until the frittata is almost set but the top is still runny, about 2 minutes. Then place the skillet under the broiler (set on high) until the top is set and golden brown on top, about 2 minutes. Sprinkle with fresh cracked pepper and let the frittata stand 2 minutes. The frittata should slide out of skillet onto a cutting board to cut into slices. Serve on top of a bed of greens of your choice. I used local arugula.
