crock pot meals??

Hey guys I am looking for some low fat low calorie crock pot meals. Tricky part is I am not eating potatoes or rice. If you have any recipes you would like to share I would love to hear it!!

P.S I have already tried the cream chicken taco soup (which was awesome)

  • Lentil Chili

    get some bean mix with lentils in it...(Costco has a big tub for cheap)

    soak overnight

    drain water, put chicken broth in to cook the beans in

    add a can of tomato sauce

    Puree a handful of carrots and add it

    sautee whatever veggies you like and toss em in (I do bell peppers, onion, and garlic)

    Then I add salt, cumin, garlic powder, and chili powder

    I think it is like 200 calories a cup, super filling and good for you

    No fat unless you use some to sautee your veggies

    Sometimes I add lean turkey burger or shredded chicken breast

    Def use the Search feature on here for Crockpot recipes - there have been some amazing ones!!!
    I would think with most of them you can just leave out the potatoes or rice if you are not eating those.

    My fave crockpot meal:

    4-6 boneless skinless chicken breasts
    1 large jar salsa (I like hot)

    spray your crockpot with non-stick spray
    pour in a little salsa to coat the bottom
    arrange chicken breasts and layer with salsa
    pour remaining salsa over the top
    6 hrs low, 8 hrs high

    you can fork-shred the meat and use in many ways!

    Chicken breasts, cover with low-sodium soup and frozen veggies, cook on high for 30 minutes then reduce to low (not warm, but LOW) for another 4-5 hours. So easy!

    Also, slow-cooker black beans with water and low-sodium chicken bouillon is easy and amazing. Add cayenne for a kick!

    A few off the top of my head:

    Crock pot tacos:

    6 chicken breast
    1 jar salsa
    1 pack taco mix

    Crock pot Hawaiian chicken

    4 chicken breast
    1 can pineapple, half juice drained (get canned in juice, not syrup)
    1/2c soy sauce
    1/2c teriyaki sauce
    red pepper flakes to taste

    An excellent crock pot carnita pork recipe can be found at skinnytaste.com, as well as a few others.

    A lot of the time I just throw recipes together. Once you know what you're doing, crock pot cooking is so stupidly easy, it awesome. I made a really good taco soup-esque dish not too long ago just by throwing together some stuff I had on hand (I think some chicken, canned tomatoes, canned green chilis, beans, and some seasoning, but I honestly don't remember).

    There are some really great crockpot recipes on skinnytaste.com. The chicken enchilada soup, and pork carnitas are both amazing!

    Salsa chicken. Salsa and chicken in the crockpot frozen or thawed cook on low 8 hours. For an added kick you can throw in a can of black beans and corn. Serve with rice or roll up in tortillas. Everyone in my house loves this as well as my coworkers

    I make a vegetable soup that is virtually fat free. It does have potato and pumpkin but you can use whatever vegetables you like.

    Chopped Veg:
    Root veg - (carrots, pumpkin and potato) cut into inch sized cubes
    Other veg - chunky sliced celery, onion, broccoli and cauliflower
    Add a couple of thinly cliced hot chillis for a bit of heat

    Add enough veggies to fill your crock pot about 1/3 - 3/4 full, depending on how hearty you like your soup. Fill the remaining space with half canned peeled tomatos (and the juice) and half vegetable stock. Add chillies, some black peppercorns and a couple of sprigs of rosemary (fresh if you can) and cook on the lowest setting until your veggies are tender.

    Delicious and warming for winter :) Plus very filling for a vegetarian dish

    Taco stew, actually made this yesterday with ground turkey yumm. We used a crockpot everyday for 2 months straight and it was awesome to come home and everything was ready. Lasagna, ziti, meatloaf, meatballs, pork chops you name it i tried it. Basically googled recipes

    I use my crock pot A LOT. I make the taco chicken meat referenced above, Chicken Enchilada Soup, Mexican Flank Steak, Jambalaya, Spaghetti Sauce, Barbecue Chicken, and overnight oatmeal. Let me know if you want any of those recipes.
