Very tastey indeed. I found it in USA Weekend:
Yields 6 servings:
Per serving: 143 calories; 20g carbs; 8g protein; 4g fat (0.5g saturated); 5g fiber; 0mg cholesterol, 323 sodium.
One 15.5 oz Can Cannellini or white beans (low sodium)
1TBSP Olive Oil
1/2 Large Onion, diced (1cup)
1 Medium Carrot, diced (1/2 cup)
2 Stalks Celery, diced (1/2 cup)
1 Small Zucchini (1/2lb) diced, (1 1/2 cups)
1 Clove Garlic, minced (1 TSP)
1 TSP Dried Thyme
2 TSP Dried Sage
1/2 TSP Salt (or more to your liking)
1/4 TSP Coarse Black Pepper (or more to your liking)
4 Cups Low-Sodium Vegetable or Chicken Broth
One 14.5 oz Can (no salt added) Diced Tomatoes, with juices.
2 oz Baby Spinach Leaves (2 cups lightly packed) Chopped
OPTIONAL 1/3 CUP FRESHLY GRATED PARMESAN CHEESE!!!
mash half the beans set aside. Heat oil (on med high heat) in a large soup pan add all veggies( except beans/spinach& diced tomatoes) and spices. cook 8 minutes. add broth & diced tomatoes, bring to boil. add mashed and whole beans and spinach. cook until spinach wilted about 5 mintues. Serve topped with parmesan. enjoy!
