Need help choosing "end of day" snack

When I started MFP back in January I was aiming for 1200 - 1300 calories a day. I sit at a desk all day and I wasn't exercising at all. After 8 weeks and 15 pounds lost I am now doing some light exercise in the evening (stair stepper for about 10 minutes and lifing my little 3 lb. hand weights or doing a beginners Pilates video).
My question is this: When I get to the end of my day (after I've done my little bit of exercise) and am BELOW 1200 calories, what is a good, healthy snack to have?
I'm usually not hungry after my exercise and it is usually late in the evening so I've been hesitant to eat something additional but everything I've read says that eating less than 1200 is a no-no especially if I'm exercising, albeit very little at this point.
Suggestions please

I love dry Kashi cereal with a handful of almonds and a teeny/tiny pack of raisins. It satisfies my desire to crunch with healthy carbs. I also sometimes make myself some protein powder enhanced SF pudding if I am having a chocolate craving. I am going to try making it with almond milk tonight...wish me luck!!0

Candy. It's not healthy, but I want it! I like gnawing on a frozen mini milky way.
Or sometimes a bagel thin with whipped cream cheese.0 -
Yogurt
fruit
celery and peanut butter
banana and peanut butter
hummus and vegetables for dipping (carrots, pepper strips, etc.)
bowl of cereal

I am a nighttime snacker and I too have to eat to make up my daily 1200 calorie intake. My favorite snacks are 20 Snyder's Fat Free mini pretzles at 110 calories; or 27 Kellogg's Cracker Crisps - Sour Cream & Onion at 110 calories; or Krave Cereal 1 serving (I think 31 grams) at 120 calories.0

Lately I've been having an apple and a handful of pistachios and some cheddar cheese slices. It's filling enough but not heavy before bed.0

Grab one of those Yoplait lite yogurt. They come in great flavors for 110 cal. I love the Boston Cream Pie, Apple Turnover or Red Velvet Cake. Yum Yum0
