Something fun to do with ALREADY COOKED salmon?

My boyfriend's mother always brings him fresh, cooked Salmon from Florida. Anyone know of a delicious recipe we could use this in?

  • Here's what I did with mine this morning. Cooked it before coming to work.

    Healthy Harvest Wheat Rotini (1 c.)
    2 T EVOO
    6 cherry tomatoes
    2 c. fresh spinach
    1/2 onion
    1/2 bell pepper
    4 oz. Alantic Salmon
    1/2 c. cilantro chopped

    Boil pasta as directed.
    Saute bell pepper/onion. Add the spinach and continue until spinach wilts and then add tomatoes. Very end of cooking add cilantro. Set aside into bowl.

    Clean pan and use 1 tsp EVOO and cook salmon accordingly.

    Place Salmon on top of pasta and VOILA!

    TASTY and hearty!

    make super quick blackened salmon. since it's already cooked just sprinkle the cajun seasoning on both sides and throw it in a HOT skillet for about 45 secs to a min on each side so it can get happy then serve it as part of a main course with some healthy sides or cut it up for a salad, put it in a wrap for a yummy lunch, mix it with a bit of low fat mayo then put on some low cal crackers for a snack.

    I used salmon, lowfat sour cream, a little lowfat mayo, dijon mustard, green onion, garlic powder, salt & pepper, and bread crumbs. (kinda just started adding stuff in until I got the right consistency) Then made into patties, dipped in more breadcrumbs and baked (on a foil lined and non-stick sprayed sheet) at 350 for about 20ish minutes.

    Ooooooh! And I also made a sauce with lowfat sour cream, a little dijon mustard, and a little Tobasco, and salt & pepper!
