Potato Corn Chowder
I just made this for lunch and thought I'd post it as I think a lot of people tend to avoid chowders or "cream" soups but this was SO tasty (even my fiance who's not loving this healthy eating thing thought it was fantastic) and it was only about 230 cal for about 2 cups.
10 baby potatos
1 green pepper
1 red pepper
1/2 red onion (medium)
3 celery stalks
1 tsp chopped garlic (about 1 clove)
2 tsp margarine
4 piece thick cut bacon (thats right, it has bacon and is still healthy!)
1 cup frozen corn
1 tsp oxo reduced sodium chicken broth powder
2 Tbsp all purpose flour
1/2 tsp steakhouse pepper (and any other seasonings as desired)
1 cup 1% milk (or skim, this is just what I had in the house)
in a big ol' pot put butter and turn to medium heat. Chop onion and add to pot. while that sautes chop potatoes, peppers, celery into small bite sized pieces and add to pot. add garlic. add 1.5 cups of water with chicken broth powder. cover let cook until potatoes and veggies are at desired tenderness. cook bacon in separate pan until very crispy, remove put on plate or cutting board to cool. After is cooled break into bitesized pieces. Once veggies are at desired tenderness add bacon and frozen corn. Add flouer and pepper (and any other spices) into a small container (I used a 1 cup gladware container) add cold water (about as much as you have flour and spices so container is about half full at this point) put the lid on and shake until mixed. add milk and flour mixture to the pot on the stove, stir and let simmer a couple minutes to let flour taste cook off. serve and enjoy!!
It was thick and tasted creamy and buttery and seriously tasted like it was SO much worse for me than it was and cuz of all the fibrous veggies its very filling

I have made this many times but I add crushed red pepper and hot sauce which really improves the flavor.0
