Lunch ideas?

In the fridge I have boneless skinless chicken breast, carrots, celery, yellow squash, fresh green beans. I have all kinds of canned goods, black beans, kidney beans, cannellini beans, canned tomatoes, a bunch of different pastas. Lately I've been having a lot of stir fry type meals or some kind of meat with sauteed vegetables and 1/4 cup rice on the side. Anyway, I was wondering if anybody had any good soup recipes with these ingredients or different lunch ideas? Thanks :)

Hmm, soup does sound like a good idea. Unfortunately I have no recipes to share (not a cook, myself).

But one idea is if you just wanted to do something different maybe you could do a sandwich on whole wheat bread with some chopped up chicken and light mayonnaise mixed up? I don't know if that's an option but I like it now and then as a really simple way to switch things up.

Canned tomatoes and pasta sound like a possibility for something too, though I'm hopeless at what. Gah, my cooking skills are very poor. LOL

    Good luck!

Seeing you mention chicken, beans and soup instantly made me think of Chicken Tortilla Soup. Here is a low fat/low cal crockpot recipe.
