Peanut Butter & Banana French Toast

I had peanut butter and banana french toast for the first time last weekend at a place called Cafe 222 in San Diego. It was really good and seemed really simple so I wanted to make it myself this morning. It turned out just as good and I'm sure is a lot less calories than the cafe version. I made a veggie egg scramble with it. It's about 450 cals for the meal!

Here are the things I used:

For the French Toast:
1/3 cup egg substitute (seasoned with a dash of cinnamon and vanilla extract) ~ 45 cals
2 slices of Nature's Own Whole Wheat bread ~ 100 cals (50 cals per slice)
1 tbsp peanut butter ~ 90 cals
1/2 banana ~ 50 cals
1/4 cup sugar free syrup ~ 20 cals

For egg scramble:
1 cup egg substitute ~ 120 cals
About 1.5 oz of mixed veggies (broccoli, snap peas, asparagus) ~ 25 cals (I mistakenly didn't weigh the veggies, but I didn't use very much. Still, cals are an estimate)

    It is funny you posted this. I was just looking at my recipe for this and deiced to make this as a special weekend treat for my husband tomorrow morning.
