Found this recipe in Woman's World, hubby and I are trying it out tonight:
-1 cup frozen, unsweetened sliced peaches, 4.5 oz., partially thawed and chopped
-2 tsp + 2 tbs all fruit orange marmalade
-2 tsp finely chopped onion
-1 tsp wine vinegar
-1/2 tsp minced peeled fresh ginger
-1 small clove garlic, minced
-1/8 tsp salt
-cooking spray
-1 lb. boneless center-cut prk loin roast, all visible fast discarded
-1/4 tsp salt-free lemon pepper
1. Preheat oven to 425 degrees.
2. In small bowl, stir together peaches, 2 tsp marmalade, onion, vinegar, ginger, garlic, and salt. Let stand at room temperature while roasting pork.
3. Line roasting pan with foil. Lightly coat with cooking spray. Sprinkle pork with lemon pepper. Place in pan. Roast 25 minutes.
4. Brush top of pork with remaining 2 tbs of marmalade.
5. Roast pork 10 minutes or until pork is just slightly pink in the center and registers 155 degrees on an instant-read thermometer. Remove from over.
6. Cover loosely with foil. Let stand 10 minutes.
7. Cut pork into medium-thick slices. Serve with peach chutney.
We're serving this with some mixed veggies and homemade breadsticks!

I wonder if you used a sugar free marmalade if the flavor would be as good?0

I don't know, we used a sweet marmalade and it was amazing!0

It was amazing! We ended up doing it with a pork loin, and we doubled the peach chutney because we like a lot of flavor. We served it with stir-fried sugar snap peas, carrots, and peppers, and garlic bread.0
