Hello!

So, I am hosting my own little dinner party tomorrow night for a group of friends. And due to a hectic schedule etc. etc., I'm really wanting to try out my slow cooker for the first time. But I've left the planning a little bit late!

Can anybody recommend any good slow cooker recipes?!

Or maybe a good website where I will be able to find some?

    search the recipe forum on here for Crock Pot or Slow Cooker and you'll come up with tons of recipes and sites.

    Two Cans Chunk Chicken
    Texas Pete
    Two Cups Plain Greek Yogurt
    Big Container Fat Free Sour Cream

    Serve with Celery

    Not as thick as the cream cheese version but pretty good.

    CREAMY CHICKEN TACO SOUP (SERVES 6)
    2 frozen chicken breasts
    1 can Rotel tomatoes
    1 can whole kernel corn (don't drain)
    1 can black beans - rinsed & drained
    1 packet dry ranch seasoning packet
    1 tsp chili powder
    1 tsp cumin
    1 tsp onion powder
    fat-free cream cheese

    Mix all ingredients except cream cheese together in crockpot. Cook on low 6-8 hours (frozen chicken) or high 3-4 hours (thawed chicken). About 1/2 hour before ready, take chicken out of crockpot, shred with fork and put back in pot. Also cut cream cheese into cubes and put in crock pot. Stir to mix in, turn crock pot on high to melt cream cheese.

    This can be served over rice, in tortillas or however you like. I personally just eat mine in a bowl with avacado slices on top. But some topping suggestions would be green onion, tortilla strips, sour cream, shred cheese.

    We made this this past weekend. It was amazing!

    From peanutbutterboy.com

    Chicken Mole

    1 cup chopped onion
    1/2 cup golden raisins
    3 cloves garlic, minced
    2T toasted sesame seeds
    4t chili powder
    1t ground cumin
    1t ground cinnamon
    1/2t ground coriander
    1/8t ground nutmeg
    3T unsweetened cocoa powder
    2 canned chipotle peppers in adobo sauce, minced
    3T peanut butter
    1T maple syrup
    1 (28 ounce) can crushed tomatoes
    1 1/2 pounds skinless, boneless chicken breast (3 large breasts)

    Instructions:

    Slow-Cooker: Place all ingredients except for chicken in a slow cooker. Stir sauce until well mixed, taste, and adjust any seasonings to taste. Add chicken and stir to cover. Place lid on slow cooker and cook on low for 5 hours. If desired, remove the chicken and shred with 2 forks, then stir back into the sauce. Otherwise serve chicken breasts whole with sauce on top.

    Taco Soup

    (I buy low sodium products)
    2 cans sweet corn
    2 cans black beans
    2 cans chili beans (mild or medium flavor)
    1 med. jar of Pace picante sauce
    2 lbs ground beef, turkey, chicken (you pick)
    2 Tbsp minced garlic
    1Tbsp onion
    1 packet of taco seasoning
    1 can dice tomatoes with chillies

    cooked meat - drain - while draining saute garlic and onion in 2 Tbsp of olive oil - add diced tomatoes cook 5-7 minutes - add meat - stir and add to crock pot along with all remaining ingredients - cook on high for 6 or low for 8-10 hours

    I served with Organic blue chips, low fat sour cream and cabot low fat cheddar cheese
