Need Veggie Help

In looking over my food diary for the past few months I have noticed that adequate fruit intake doesn't seem to be an issue for me, but I am not eating my veggies! I will make a salad a few times a week (spinach, carrots, colored peppers, sometimes tomatoes and cukes) and sometimes broccoli or Brussel sprouts for dinner, but I am getting tired of the salads. Any good, interesting ways to help me up my veggie consumption? Ideally, I'd like to consume most at lunch, as that's the easiest meal for me to prepare (the night ahead).

    Just use raw veggies and make yourself a small veggie tray and eat it with some low fat ranch dip! Mmmm.

    I like to make a make a big pan of roasted veggies...cauliflower, mushrooms, onions, garlic, zucchini, squash, and anything else that tickles my fancy. Just cut them up, throw them in a pyrex or roasting pan, drizzle a little olive oil, some salt (I like to use Kosher salt for the taste), seasonings, and mix them up. Throw them in the oven at 425 (uncovered) for about 20 minutes, give them a stir, then continue cooking for another 20-25 minutes. Viola! You have enough roasted veggies for the week!

    Also, throw in a bag of celery, carrots, avocado, cherry tomatoes, etc in your lunch with some hummus...you're getting veggies AND protein!

    One last salad idea (it helps being married to a Persian!)...chop up cucumber, tomato, onion, and some avocado (optional) and throw in a bowl. Add a little olive oil, some lemon juice (fresh is best, but the bottled stuff works just as well!), salt and pepper (to taste). There you have a Salad Shirazi! You can eat it as a side dish, on it's own, throw it on a sandwich or a bed of lettuce, and more.

  • We have rediscovered frozen veggies! Anything you like, microwave and season with salt, pepper, some I can't believe it's not butter spray, and Voila!, a quick lunch is served!

    My usual dinner is a mix of whatever steamed vegetables and fresh greens are on hand. I market on the weekend, select whatever looks good and is priced right, and steam it all up for the week. For protein I add either 3 ounces of grilled fish or canned fish or soy (we use soya kaas fat free or gimme lean). I sometimes add some salad dressing. This salad/steamed combo provides all the vegetables I need each day - I'm sure this would work as well at lunch.

    Wraps, heavy on the veggies, or stir-fries heavy on veggies. With the stir fry you could also get in some whole grains with brown rice.

    I like to chop spinach to put on sandwiches or in pitas (like other people use lettuce). I also like to roast veggies (as another poster mentioned). They are very, very good that way!

    Slice up some roma tomatoes, line on a baking sheet and drizzle with a little bit of olive oil. Sprinkle with kosher salt and italian seasonings and roast at 400 for 20 minutes. So good!

    I also like to throw some chicken in a crockpot with sliced peppers, diced tomato and onion and 1/2 cup of lime juice. It makes a great taco filling.
