Curried Chicken Salad Wraps

Ingredients
2 cups cooked, skinless chicken breast diced
½ cup reduced fat Greek yogurt
1 tsp curry powder
1/8 tsp salt
¼ raw cashews, roughly chopped
¼ cup dried apricots, diced
8 Leaves if Bibb lettuce, washed and dried

Combine the yogurt with the curry powder and salt in a mixing bowl. Add the chicken, cashews and dried apricots. Mix until well coated. Divide the salad onto eight leaves and roll up.

(Serving size 2 wraps)
