Low cal, Flour-free, gluten free, BROWNIES!! ;) With pics!

Hello everybody!!! Earlier today, I had a KILLER craving for chocolate (girls, you know what I mean. ^_^;;) So, I developed this brownie recipe. Remember, it is very versatile, so feel free to change whatever you want!! ^_^ This is just what I used.

Ingredients:
1/2 cup of unsweetened cocoa powder. (Must be unsweetened!)
1/3 cup of coconut butter or oil. (You can sub with real butter or margarine)
3 eggs
3/4 cup of egg beaters (or 4 eggs worth)
1/2 cup of raw organic honey (you can sub 1 cup of sugar, or sugar substitute equivalent)
1/2 cup of coconut flour* (See note below)
1 tsp vanilla
1/4 cup of milk (You can adjust this.) ^_^

Preheat over to 350 degrees.

Soften the coconut butter (I used earth balance coconut spread) but make sure its not warm so it doesn't cook the eggs. Mix with the honey and cocoa powder.
Add the eggs and egg beaters. You can use all egg beaters or all eggs, just so it is about equal to 6 eggs. I know it seems like a lot of eggs, but when working with coconut flour, you usually need a lot of eggs.
Mix in the eggs well, then add he coconut flour.
Add the vanilla, and keep mixing until the consistency is to your liking.
Add milk if you want a thinner batter. Coconut flour tends to be really absorbent.

Spread in a baking pan, I think mine was 8x8, then bake for about 20-30 minutes, depending on the size of your pan.

Mine were slightly dry, but that is because I cooked them a little too long. If only I took them out 5 minutes earlier... *sighs*

You can add nuts, chocolate chips, banana, and whatever you want!! They are your brownies!!

*Coconut flour is finely ground coconut meat. On youtube there are videos on how to make it, or you can buy it at your local whole foods or trader joe's. It's a bit more expensive, but it is very high in fiber and tastes great, also much better for you than normal white flour. You can sub coconut flour with whole wheat flour, almond flour, rice flour, or white flour. Just keep in mind you will have to make adjustments to the recipe according to the flour you use. :)
