:noway: So, Guys, I am a picky eater..for the most part...
My boyfriends diet has been restricted due to diabetes and for the past 2 weeks all we have eatten for dinner is salad with chicken breast or tenderloin... Were both getting sick of it..I'm NOT a veggie fanatic..But I want to eat healthy and change it all up. Any suggestions?

Bison meat is super lean. Also you can't go wrong with baked fish. Beans are a great source of protein and fiber and are a good alternative to top off your salad with if you're getting sick of meat. Good luck!0

How about a spanish omelette? Throw in some ham, onions, fat free cheese, mushrooms, and whatever else strikes your fancy, and top it with some salsa and a dab of sour cream on top...
Or take a chicken breast and pound it thin. Season to taste, then layer a slice of ham and mozzerella cheese (I use low fat or fat freecheese), roll it up and place it in a pan. Sprinkle with a little bread crumbs on it and spray some Pam, then bake it.. You could eat it with wild rice and some seasonal greens.
Make shish kebobs with the steak tenderloins. Skewer whatever kinds of veggies you like along with it...mushrooms, corn on the cob, zuchini, onions, eggplant, baby potatos, and brush lightly with olive oil. Grill and enjoy!0 -
Swap out ground turkey for some of your ground beef favorites. That should shed a few calories. My favorite is black bean and turkey chili. Here's the recipe:
1 Tbls Olive oil
1lb ground turkey
1 -2 green bell peppers, diced
1 onion diced
6 cloves of garlic minced
2 cans black beans, rinsed and drained
1 can of non-fat refried beans
1 can mild green chiles
1 large can of crushed tomatoes OR
1 small can of crushed tomatoes and 1 small can of diced tomatoes (I like tomato chunks in my chili)
1 tsp to 1 TBLsp of chili powder
1 TBL Cumin
2 tsp oregano
2-3 bay leaves
You can also add about 1 cup of corn kernels.
Cilantro for garnish.
Brown Turkey with a little olive oil along with the onion, bell pepper and garlic. Once turkey browns and veggies soften, add the rest of the ingredients and voila! Turkey chili. High in fiber, low on calories .
Makes 12 servings.
Each serving (without corn) has 202 calories, 2 g fat, 22mg Cholesterol, 298 sodium, 29 g carbs, 5 g fiber, 18 g protein, 77 mg calcium.0 -
