Cauliflower Fried "Rice"
I saw a blurb the other day about grating raw cauliflower in the food processor and then microwaving it for a few minutes to cook it. It was used as a substitution for rice.
I used it to make fried rice and was very pleased with the results.
1 head of cauliflower (grate in the food processor or by hand and cook in the microwave for about 3 minutes in 1.5 cup batches)
.5 cup of cooked meat (I used chicken) chopped into small pieces
.25 cup of egg beaters (you can use whole egg)
1 tbsp. oyster flavor saucer
.5 cup frozen peas
.5 tsp sesame oil
-mix the oyster sauce withthe egg beaters and set aside.
-heat a non-stick wok or pan. when it's ready add the cooked cauliflower and let it sit for a second or two so that it gets a bit toasty.
-add the peas and chicken to the cauliflower and stir gently (You don't want the cauliflower to mush)
-pour on the egg with oyster sauce mix and stir it in gently.
-cook until egg is done and the cauliflower is heated through.
-sprinkle on the sesame oil and serve.

I can't eat the rice because it spikes my blood sugar. So yes, now I eat miracle noodles and cauliflower as substitutes.0

I do a similar recipe, but I just fry the cauliflower from raw, no need to microwave it I find. Did a lovely one with prawns and teriyaki sauce the other day.
ETA: I'm not a low carber, but I don't think anyone can argue that a bowl of veges is bad for you lol0 -

My husband is diabetic and we have been looking for good substitutes for starch in our diet as well. This sounds like a great idea given he loves cauliflower. Thanks for the idea. Also, I would love to hear where you buy your miracle noodles, and what the carbohydrates look like in them per serving.0

Ive used it for "rice" a few times, infact I did it last night. Its ok, for 4 cups of cauliflower vs 4 cups of rice, you can save 500 or so calories in a recipe not really huge if your talking about dividing that by 4, but every bit helps.
Last night I simmered 2 chicken breasts in 1 can of black beans with liquids, 1 can of corn with its liquid, 1 cup of salsa, removed the chicken once cooked, shredded it and put it back, and the stirred in 8 oz of Fat free cream cheese, served over the "cauliflower rice" for a good size bowl of this mexi chicken, it was 297 calories plus 25 for a cup of the cauliflower rice.
not trying to jack the thread. sorry.
It may not be anywhere as good as real rice, but saving 125 calories in your supper could almost let you eat a serving of ice cream.0 -
