    Small flour tortilla topped with ff refried beans, red bell pepper, diced jalepeno, sweet onion, then baked; then topped with shredded low fat cheese and baked some more, then topped with sour cream. Yum!

    Organic Tomato & Roasted Red Pepper Soup (Low Sodium), with two mini pizzas made of rice cakes, tomato sauce, and mozzarella cheese. So yummy and filling.

    Tuna bake ... Tuna, Sweetcorn, Peas, Capsicum (Peppers), Celery, Chopped Tomatos topped with a bit of cheese.

    If I'm going bonkers I might do some garlic bread.

  • 3 oz. extra lean boneless pork chop, 4 oz steamed asparagus, 1 cup (microwaved) cubed butternut squash. Very filling and tasty.

    I made some Albondigas (Mexican meatball soup from lean ground turkey) and added some veggies: tomatoes, cabbage, zucchini, potatoes, onions and spices. It's been cold here in Cali over the weekend, so I felt soup would help. =)

    Mini taco bowls.....313 calories for two including sour cream. First time making them, hope they turn out yummy!! Still got a couple hours till dinner!!

    I just looked this up because it sounded awesome. YUMMY! I am doing this for sure. I found a link on Emily Bites and pinned it to my Recipe board on Pinterest, lol :) Thanks for the idea! And I also thought I could make the same thing making them inside the muffin tins and using two wonton wrappers as the base. Great idea, thanks again for posting!

    Trying out the Biggest Loser cookbook I've had for a year or two but never used. I made the sweet and sour chicken with brown rice and green beans. Both grown ups and kids liked it!

    Vegan "tuna" salad with raw spinach in a whole wheat pita, just for one broccoli in cheese sauce tray, and a mint skinny cow ice cream sandwich for dessert!

    Im a lacto ovo vegetarian for health reasons, but every now and then I eat chicken, fish, or bacon. I have a hard time tolerating red meat so I VERY rarely eat it.
  • Carne Asada, Brown Rice, peppers and onions sauted, with lettuce wrap. Side spinach salad.
  • Boneless skinless chicken, baked in oven with 1/2 tablespoon of olive oil, sprinkled with hot sauce.

    Cali style frozen veggies and a serving of brown rice.

    LOL, I have this EVERY night.

    Turkey meatballs (Farm Rich; 150 cal for 5!) in chili sauce/raspberry jelly sauce on a 100-cal English Muffin with a bit of part-skim mozzarella. Very different for me and totally delish!
