Lower Calorie... very tasty... Banana Bread

Hey everyone... I was playing in the kitchen and had a craving for banana bread. Here's the tweaked recipe I've come up with... and IT WORKS! Moist, filling, super yummy!

- Bananas - Raw, 3 small (6" to 6-7/8" long) (About 270 calories)
- Applesauce - Unsweetened, 1/3 cup (40 calories)
-Planter's - Peanut Oil, 1 tablespoons (40 calories - you can sub if allergic, but watch the difference in calories!)
- Egg Beaters Original - Egg Substitute, 3 Tbsp (46g)(25 calories)
- Generic - Sugar White Granulated, by Cup, 0.75 cup (581 calories)
-Mccormick's - Pure Vanilla Extract, 1 tsp (12 calories)
-Baking soda, 1 tsp
- Spices - Salt, table, 1 dash
Spices - Cinnamon, ground (I used about 2 tsp to 1 tbsp - so around 18 calories)
Spices - Nutmeg, ground, 1 tsp (12 calories)
Robin Hood - All-Purpose Flour, 1.5 cup (600 calories)


Whole recipe Total Calories: 1598
Per Serving (18 servings per recipe): 89 calories

Preheat oven to 350F

Mash banana, mix in applesauce and oil until smooth. (Oil has been cut to 1 tbsp... original recipe called for 1/3 c of oil, no applesauce. Oil is still required for the baking to happen "properly", so don't omit). Stir in egg, sugar, vanilla, baking soda, salt, cinnamon, nutmeg, blend together until smooth. Stir in flour. Pour into medium sized loaf pan which has been lined with parchment paper.

Bake for 1 hour.

    yum! I just made a loaf of standard banana bread for my husband. Wish I would of seen this!

    Yum, but I'm not sure we can get egg substitute in Australia (I might be wrong!) could you use normal egg instead (just higher calories obviously!)??

    BUMP for later. I am in Australia too, just wondering about egg substitute - and one thing suggested is banana - so wonder if we could just leave out the egg substitute altogether, and add a bit of baking POWDER as well as the bicarb soda, baking powder makes it rise.

    You can absolutely use regular egg! The initial recipe was from a website, and was the full fat, "full flavour" variety. ;)

    However, while I've removed most of the fat, it's still wonderfully flavourful!

    Awesome!!! Thanks heaps I'll give this a go this weekend, I love, LOVE banana bread - back in the day I used to have a piece every day lol.
