This is my fav protein and was wondering if anyone has any ideas for prep,keep in mind we do not have a grill as of yet.please share ideas

    Butterfly

    Pound a little thinner

    roll with stuffing of choice

    Brown in a hot pan

    throw in oven @450 for 10 min or so till cooked through

    I like to cut it up with a bunch of fresh or frozen veggies and make a stir fry. Also, bake it in the oven with some lemon pepper on it.

    My fall back for dinner s boneless chicken breast baked. I use various seasoning mixes on it. Mrs Dash Cajun and McCormick Montreal chicken are family favorites. Leftovers are gratin salads. I also do it with chopped peppers, onions, tomatoes and italian seasonings I. The oven or on the stove. Making me hungry!

    Broccoli & Chicken Alfredo Fettucine

    boil water in a big pot

    about half as much as the chicken amount..throw in broccoli florets ( I always throw in a ton more ;-) drain water into another pot for use to boil fettucine noodles (vegetable water is great for extra nutrients and flavor)

    boil broccoli water

    add fettucine noodles

    boil some chicken breasts, boneless, skinless in a pan

    when chicken is done cut in chunks

    Add Alfredo sauce..I use Ragu Alfredo sauce..easy and done! Mix altogether and voila!

    4 frozen chicken breast in a crockpot with some italian dressing, cook on low for 4-5 hours or on high for 2-3. You can use a bottled dressing or the seasoning packet mixed with 1/4 cup water.
    -you can just eat the chicken
    -i also prep like this and then shred it for enchiladas, tacos, chicken salad

    2-3 thawed chicken breast in a oven safe dish with a lid, squirt on a little lemon juice and some seasoning. bake at 350 for 20 mins

    bake a couple chicken breast and cut them into small cubes and add to a romaine lettuce salad ... use a fat free dressing or vinagrette to top

    Tuscan Chicken Salad (makes four servings)

    1 15-ounce can of cannellini beans, rinsed and drained

    2 1/2 cups diced cooked chicken breast

    1 1/2 cups diced celery

    1/4 cup crumbled feta cheese

    1 cup coarsely chopped fresh basil,

    Salt & freshly ground pepper to taste (optional)

    2 cups torn escarole or romaine lettuce

    2 cups torn radicchio leaves

    Vinaigrette:

    1 medium clove garlic

    1/4 teaspoon salt

    5 tablespoons olive oil

    1/4 cup white-wine vinegar or red-wine vinegar

    1 tablespoon Dijon mustard

    Total Calories: 428 calories (per serving)

    To prepare vinaigrette: Peel the garlic and chop finely. Whisk in 5 tablespoons oil. Add vinegar and mustard; whisk until well blended. Season with salt and set aside.

    To prepare salad: Combine beans, chicken, celery, cheese in a large bowl until well blended. Add chopped basil and 3/4 cup vinaigrette; toss until combined. Taste and season with salt and/or pepper, if desired. Add in salad greens at the end to prevent wilting.

    A grill pan works just as good. I love mine.
