Baked zucchini chips

Made these tonight. YUM!

2 medium zucchini cut into 1/4 inch slices
1/2 cup seasoned bread crumbs (i used panko bread crumbs)
1/8 tsp. black pepper
2 tbs grated parmesan cheese
2 egg whites

Combine all dry ingredients in a bowl. Preheat oven to 475. Dip zucchini slices in egg whites, then in mix, then place on a lightly oiled baking sheet. Put in oven for 5 minutes. Take out, flip slices over, put back in oven for 5-10 min. DONE!

Serves 4. 92 cal. 1.7 g fat. 2mg cholesterol. 340mg sodium. 13.8g carbs. 1.8g fiber. 6.1g protein

Had this as a side to some lemon pepper Dover Sole. Zucchini was so good I could have eaten ALL 4 servings!

    You can also make them without the crumbs. Slice them very thinly, spray a bit of olive oil spray on them, sprinkle salt/pepper if you like (I usually lightly sprinkle chilli flakes), spread them on a baking tray and bake in the oven. If you cool them on paper towel they crisp up as they cool. VERY tasty and hardly any calories. :)
