Horse Cookies

So, my boyfriends daughter made these tonight - yes, for a horse - and I started noticing all the ingredients and kept thinking to myself, "Man, I bet these are good!!" And boy am I right!! Not a super-sweet snack, but just enough! Would be great with a glass of milk!!

Horse Cookies
Serving; 3 cookies
Makes approx 30-32 cookies

1 c quick oats
1 c flour
1 c shredded carrots
1 tsp of salt
1 tsp of sugar
2 tsp canola or veg oil
1/4 molasses
1 c chopped or shredded apples

Mix all ingredients together in a bowl until combined. Form the mixture into small balls and place them on a greased cookie sheet. Bake at 350 degrees for 15 minutes or until golden brown.

Per serving (3 cookies): 115 calories; 24 carb; 2 fat; 2 protein; 2 fiber; 252 sodium

Per cookie: 36 calories; 7 carbs; 0 fat; 1 protein; 1 fiber; 79 sodium

    Ahahaha, this made me laugh, I just pictured someone sitting in the kitchen trying to sneak a bite of a horse cookie without anyone noticing.

    I have peppermint treat for my horses and steer....they smell so good that I've been tempted to eat one. :laugh:

    I used to make a hot bran mash for my horses once a week that smelled deelish! I bet these are just as good.

    Thank You for the recipe, not only do i have a horse which would love those, they do sound mighty good for me too :) - Maybe i could share one with my horse, lol :)
  • We made them pretty small, but you could make bigger cookies and adjust the numbers accordingly.

    I'm thinking they could use some cinnamon. Maybe replace the oil with some mashed banana? And then you'd have a bangin' good cookie!!
