Ricotta Garlic Stuffed Mushrooms - Low Carb/Cal
I'm not on a low carb diet, but made these tonight... thought others may wanna test them out... they were AMAZING... was too hungry to take pics x_X
Mushrooms, 8 caps
turkey bacon, 0.5 Slice (chopped in small pieces... bacon bits would also work)
Trader Joe - Lacey Swiss & Colby Marbled Cheese Slices, 1 slice (or any cheese that you like)
onion, 1 tbs chopped or diced
Garlic Cloves, 4 Medium Cloves crushed and minced
Fat Free Ricotta Cheese, 1/8 c (or 2 tbs)
salt & pepper as you like
dried parsley flakes or any other herbs/seasonings
preheat oven to 350
1.) Sautee the bacon bits, garlic, and onion until brown or to your liking (you may need oil... i used a nonstick pan, no oil)
2.) In a small bowl mixing bowl combine the sauteed mixture with the cheese, salt, pepper, and other seasonings
3.) Place caps on a baking sheet or foil (spray oil or grease if you'd like)
4.) Spoon mixture into each cap
5. ) Bake for 20 +/- minutes ( I broiled for 3 minutes after this to brown the tops)
6.) Enjoy!!!
Total for Each Mushroom: 24 cals, 2 carbs, 1 fat, 2 protein
