Cant eat meat on Friday..

So since I cant eat meat on Friday, that means todays lunch and dinner are way up in the air.... idk what I should eat/make. Any Ideas?

    A nice light meal of fettuccine alfredo should suffice, throw in some garlic bread so that you've incorporated all of the different food groups in that one meal.

    Peanut butter on wheat, eggs, cereal and milk, shrimp, crawfish, crabs..... in the south Lent is just an excuse for us to eat all the boiled seafood we can!

    I try and make it a rule to not eat meat every Friday, not just during lent!

    Apparently it's a Chicago-Italian thing. I can't find them at all in places down in KCK. :(

    I grew up eating them, even when it wasn't Lent.

    If you want something delicious, put together a mezze plate with falafel, hummus, baba, tabouli, dolmas, olives, maybe a hunk of feta cheese.

    If you want something less delicious but still good, make a big salad with tofu, boiled eggs, and/or chickpeas for protein, or spaghetti with vegetarian meatballs (Trader Joes has 'em), or just a good old veggie burger with baked beans on the side.

    Maybe this is a good opportunity to try something new. Seafood comes in many different varieties and I'm sure there are some kinds that you would enjoy.

    Same for me. I don't eat meats on Friday...so on the menu today is veggie burger and roasted vegetable couscous for lunch and possible dinner menu.....salad with grilled tofu. It isn't too hard. There are some great veggie alternatives available.

    Try this recipe - my family loves it (well the ones that will eat tomatoes - a couple of my kids are picky!)
    (I usually use canned kidney beans, instead of pinto and I use one can of Rotel tomatoes w/ chillis.)

    Chock Full Of Veggies Chilli- South Beach

    Minutes to Prepare: 10
    Minutes to Cook: 37
    Number of Servings: 4

    Ingredients

    1 tablespoon extra-virgin oil
    2 bell peppers (any color), chopped
    1.5 cups chopped mushrooms
    1 large onion, chopped
    2 celery stalks, chopped
    3 garlic cloves, minced
    1 tablespoon chilli powder
    1 tablespoon dried oregano
    1 teaspoon ground cumin
    1/4 teaspoon salt
    2 (15 ounce) cans pinto beans
    1 (14.5 OUNCE) can no-salt-added diced tomatoes with juices


    Directions

    In a large sucepan, heat oil over medium heat. Add bell peppers, mushrooms, onion, celery, and garlic; cook, stirring, until vegetables begin to soften, about 7 minutes. Add chilli powder, oregano, cumin, and salt; cook, stirring occasionally, 5 minutes more.
    Add beans and tomatoes with their juices. Bring to a gentlesimmer and cook, stirring occasionally, untill chilli is fragrant and slightly thickened, 25 minuted. Serve warm. Garnish with nonfat plain yogurt if you like.

    --Really good with wheat pita triangles on later diet phases.

    Home made veggie pizza; meatless spaghetti; beans, I love beans espically during lent they are so versital. Look up some vegatarion options, or try fish cooked a new way.

    I'm a bit bad, but I keep frozen fish in my freezer. Pop 1-2 in the oven for lunch or dinner.
