No meat dinner

hey all. Quick question. Any ideas for dinner tonight? I'm catholic so no meat and I'm allergic to fish. I'd rather not do the pizza pierogi and grilled cheese????? Help!!!

I have just made a big pot of pinto bean chilli that is going to last for ages and is super healthy. For 5-6 portions:
3 onions (chopped)
2 cloves carlic (chopped/crushed)
3 chillis (chopped)
2 tsp cumin
1 tsp cayenne powder
1/4 tsp allspice
2 courgettes (diced, 1cm pieces)
1 red pepper (diced, 1cm pieces)
1 tin plum tomatoes
2 tbs tomato puree
100ml red wine
1 tin pinto beans
parsley, chopped
corriander, chopped
oregano, chopped
Soften the onions in a bit of oil, once softened add the garlic, chilli, cumin, allspice, cayenne, red pepper, courgettes and stir for a few minutes. Add everything else along with about 200ml water and some salt and pepper then let simmer for about 25 minutes.
It is yummy with brown rice or wholewheat tortillas or some sliced avocado0 -
