Good low carb recipes? Especially crockpot or make-ahead?

Hi everyone,

On my doctor's advice, I am eating low carb and low sodium. I would appreciate any good recipes you have that are both low carb and low sodium. You get bonus points if they are a crockpot recipe or something that I can make ahead and freeze for later.

Also, for many reasons, we are trying to avoid processed foods and cook everything from scratch, so if a recipe requires a little work, I don't mind. I try to prepare most of our meals over the weekends, then have them available for the week. It makes it much easier as a working Mom!

As you can see, with these limitations, I have a hard time finding recipes that work for us. So your input is VERY MUCH appreciated!!

    From one working mom to another, I highly recommend finding the South Beach Diet "Quick and Easy" (http://amzn.com/1594862923) and "Superquick" (http://amzn.com/B005B1A3OQ) cookbooks. All of the recipes are delicious, take less than 30 min to prepare 'from scratch' and have notes as to the 'carb-iness' of the recipe. They have recipes for everything from breakfast to dessert, and I've used them so much the binding has fallen apart!

    I especially like the jambalaya, saffron stewed chicken, and chili recipes in the "Quick and Easy" book. Not only are they quick and easy to prepare, but I've successfully frozen and reheated them!

    There are also great recipes that take 15 min, for example - provolone chicken melts. For these, I use Tyson pre-cooked chicken breasts which get nuked for about 6 min, toast some healthy bread (whole grain, high fiber) on broil in the oven, throw on some roasted red peppers, chicken, and a slice of provolone cheese, broil until melty, and done!

    The best thing you can do to avoid sodium is to use fresh or frozen ingredients and restrain yourself from adding salt. I use low sodium chicken broth when I need it for a crockpot dish.

    Often, I make a pork roast on Sunday with onions, bell peppers, and carrots. Once I eat all the veggies, I take the remaining pork roast and make pulled pork sandwiches.

    Crock Pot Chicken Taco Chili
    Gina's Weight Watcher Recipes
    Servings: 10 • Size: 1 1/4 cups • Old Points: 3 pts • Points+: 5 pts
    Calories: 203.7 • Fat: 1.4 g • Carb: 33.3 g • Fiber: 10.0 g • Protein: 16.9 g

    Ingredients:

    1 onion, chopped
    1 16-oz can black beans
    1 16-oz can kidney beans
    1 8-oz can tomato sauce
    10 oz package frozen corn kernels
    2 14.5-oz cans diced tomatoes w/chilies
    1 packet taco seasoning
    1 tbsp cumin
    1 tbsp chili powder
    24 oz (3-4) boneless skinless chicken breasts
    chili peppers, chopped (optional)
    1/4 cup chopped fresh cilantro

    Directions:

    Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points).
