Cuban Pork & Sweet Potato Stew

This is a Weight Watcher's recipe that I've used many times. I usually double the recipe for my 6-quart crock. I just won a contest at work yesterday with this, most creative category. Enjoy!

Cuban Pork Crock Pot Stew Recipe
Ingredients:
- 1 lb lean pork loin, cut into 1-inch pieces
- 1 lb sweet potatoes, peeled and cut into 1/2-inch pieces
- 1 large green pepper, chopped
- 1 red pepper, chopped
- 14 1/2 oz canned diced tomatoes
- 1 small can green chilies
- 2 medium garlic cloves, minced
- 1 small red onion, chopped
- 1/4 cup orange juice
- 3 medium green onions
- 1 tsp table salt
- 1/4 tsp ground cumin
- 1/4 tsp black pepper
- 2 tbsp fresh lime juice
- 2 tbsp fresh chopped cilantro
- 1 tbsp fresh chopped parsley

Directions:
In your slow cooker, put pork, potatoes, chilies, tomatoes, peppers, garlic, orange juice, green onions, yellow onion salt, pepper, and; cover and cook on low setting for 6-8 hours.
Stir in parsley lime juice, and cilantro; cover slow cooker and cook for 10 minutes more.

Serving size = 2 cups
Each serving = 6 Point Total

    Tried this tonight, made 2 versions (one vegetarian with Quorn naked cutlets, and the other with the pork) both came out great (I'm told the pork did at least) however in both I added apples and carrots.

    In the vegetarian one, for flavor, I added a cube of Not-Beef boullion.

    Will definately do again, thanks!
