Pepper Spinach Salsa Egg White Pita

A delicious and very filling breakfast for those who don't mind calories in the morning. Feel free to substitute ingredients as necessary to meet your dietary goals or food choices. Substitute lower calorie pita or reduce amount of egg white if wishing to reduce the calories.

1 yellow bell pepper
6oz egg whites
1 medium tomato
1 tablespoon shredded part skim mozza (optional)
1 cup baby spinach
1 wholegrain pita
1/4 salsa
1 tsp black pepper
2 or 3 seconds of original Pam
1 tablespoon hot sauce

Apply Pam (or oil of choice) to frying pan. Chop up the bell pepper and saute till slightly soft. Place in bowl. Mix egg white with black pepper and hot sauce. Fry the egg mixture, allowing it so become slightly firm. Spread the previously prepared bell pepper evenly over top. Spread 1 tablespoon low fat shredded mozza over the pepper and egg whites. Evenly add the spinach, covering the surface. Place pita on top, hold in place and turn frying pan over. Place the pita and egg white on a plate. Slice tomato and add on top, followed by the salsa. Heat in microwave for 40 seconds or so if you wish to heat everything up.

    :smile: Mmmmm, this looks delicious! What a great way to start the morning & only 368 calories! On an additional note, very artistic with the layout of the leaf design on the plate & the eye popping red of the tomato.
