The weather causes the urge to bake SOOO....

When the weather is crap I usually love baking, it's a comfort thing and since it's been raining like crazy here in Northern Cali I decided to try some recipes that people have been kind of talking about and do a complete breakdown on calories to try to find a way to make them as guilt-free as possible. I believe that I have succeeded because I had a slice of both and I didn't feel like a stuffed pig afterwards! lol

Funfetti Diet Soda Cake: 10oz (ish) of diet sprite, 2 egg whites, 1 box of betty crocker funfetti (I used this brand because it was the lowest cals). Bake as you wish (either cupcakes or big cake) then I frosted mine with 1 1/2 cups of cool whip. (about 224 calories for 1/8 of a 2 layer cake).

Pudding Pie: buy a premade oreo cookie crust (should be 100 cals for 1/8), non fat no sugar chocolate jello (I used sunny select brand because it was a little cheaper and lower cal, and I got the bigger box), skim milk, 2 bananas. Cut the bananas into little slices (weigh to make exact calories) then line the bottom of the cookie crust with some of them, mix the jello per directions and pour some over the bananas, layer some bananas, pour more jello, then top with bananas. Put in fridge for at least an hour. It's not very pretty (my bananas browned) but it was HEAVEN and for only 194 cals for 1/8 of the pie, you can't be mad at it!!!

I'm sure many people have been making these for years, but I'm really proud of myself! I'm working on perfecting some Banana Flaxseed Muffins and I plan on trying to make a Chocolate Cake similar to the funfetti.

    Another option instead of using diet soda is to use a can of pumpkin (not pumpkin pie filling, just regular pumpkin) and mix with the cake mix. its a cake-like brownie, and super yummy. i've only tried this with chocolate mix, but i'm planning to try carrot cake mix some time in the near future :) i would recommend using a large mixer for mixing because it gets super thick

    my favorite recipe for soda cupcakes is using diet vanilla coke and mixing it with strawberry cake mix. mmmmmmmmmmm cupcakes........................
