I guess this requires some clarification. Too much is relative. So I'll say this, bread made with processed flour is generally not a great choice, whole grains are far better for you because of the type of carbohydrates they use. It's a very complex answer as to why complex carbs are better than simple (or processed) carbs, but the short answer is, simple carbs burn very fast in the body, faster than the body can use them for energy, so much of them is stored as fat. Complex carbs take far longer for the body to break down, so the burn is a lot longer, giving the body the time it needs to burn the calories as energy as opposed to storing them as fat.

Potatoes in general aren't bad for you (but they are MUCH better if you eat the skin!), they are packed with vitamins and minerals and lots of good complex carbs. For most people, it's the things they put ON a potato that ruin it. Also potatoes in the form of french fries or chips aren't all that great usually, as they are generally cooked in rendered fat, which is not a very healthy choice. Baked chips, or fries aren't bad for you though (although they aren't a STELLAR choice either) a far better alternative would be sweet potatoes in this case.

what if you bake potatoes without adding any cooking oil or anything, then they are good for you right?

Bread and potatoes .... yummy

I love sweet potatoes! I bake them and add a little bit of sour cream.
Can you eat the skin of a sweet potato? I've never really tried because it doesn't look as nice as the skin from a regular potato but maybe I'm missing out on some good nutrients.

Boss - I never understood why people don't eat the skin LOL

Sean: your baked potato is great and packed full of nutrients if you eat the skin, but loses it's greatness if you are loading it with topping such as butter, sour cream etc....
or like boss said, baking a sweet potato is an even better choice...

I've heard you can eat the skin off a swt potato, but I haven't tried it, same reason as you.
I put mine on the BBQ.

You can eat the skins! I make candied sweet potatoes for the holidays every year...slice them, unpeeled, like scalloped potatoes would be, make a mix of brown sugar, orange juice and butter, then drizzle over the slices and bake. NO idea the calorie count, but guaranteed it's not low cal/low fat, lol.

I bake mine whole & eat the skin, or cut up with skin on & roast in olive oil.
    That's for sweet potatoes

For some people, like diabetics, the starches can cause an increase in blood sugar. But, if you don't have that problem, then no worries!
