Pumpkin please!

Hi everyone,

I made some great pumpkin spice muffins from my favourite recipe book, The Looneyspoons, on the weekend. But now I have 2 cups of pure pumpkin puree left over with no idea what to do with it. Anyone have any recipe suggestions?
Hoping for something nutritional, a side dish or a main would be great, and I don't bake with refined sugars, those are the only guidelines.

    Pumkin Pudding!

    Vanilla fat free-sugar free pudding big box
    Fat Free milk
    Pumkin
    Pumkin pie spice (or cinnamon, nutmeg, ground clove to taste)

    Optional- 1-2 tbspn brown sugar for extra sweetness, or top with almond slivers or crushed gramcracker, fat-free whipped cream, or cool whip

    I love pumkin pudding and it is easy to make.

    Otherwise freeze it and save it until you make muffins again :)

    i take a can pumpkin and add it to non-fat vanilla yogurt. then add cinnamon and nutmeg- yumm!. or a can of pumpkin to a box of spice cake mix and you make cookies out of it .they are really moist.

    Pumpkin enchilada soup!! This is the BEST RECIPE. If you don't like this one, though, Hungry-girl.com has lots of other pumpkin recipes that are main dishes...I am planning to make their pumpkin chili at some point.

  • Hungry Girl uses pumpkin in a bunch of stuff.
    You could google that site. I made fudge once with it and it was yummy.
