Clean eating for people who hate cooking

I need to clean up my diet but lack the time / skills / inclination to cook. The other problem is being a vegetarian who doesn't like to eat dairy (although i will if it's 'hidden' in things)

If anyone has any ideas for anything quick, easy and clean for lunches, dinnerts and snacks, I'd be really grateful (porridge and soya milk sorts me out in the morning - isn't it funny how you can eat the same thing for breakfast every day would never dream of doing that for other meals?!)

I've recently discovered quinoia and I snack on oat cakes rather than biscuits, but I need to chuck the ready meals and chooclate!

    I would suggest to find a little time...Does not have to be much. Cooking is really easy if you know how to cut and chop. There are plenty of cookbooks out there with recipes that take little time to make. I even bought a Vegan Slowcooker cookbook from Amazon. Toaca Reno is coming out with an Eat-Clean Cookbook for Vegetarians. Should be out next month.

    this may sound dumb, saladddddddddddddddddd??? or just boil some veggies, or microwave some peas? :D

    omelettes
    rice cakes with toppings - avocado, hummus, veges, cottage cheese
    cottage cheese or yoghurt mixed with nuts , fruit and a little protein powder
    protein shakes (there's a good thread with protein shake blends right now)
    boil up rice or sweet potato in bulk and keep it int he fridge, that way when you need a meal you can just do a quick stir fry or steamed/grilled veges with some rice
    how about spray sliced veges with olive oil cooking spray, sprinkle with herbs or fresh garlic and grill. you can get ready packs of this type of thing at the supermarkes.

  • I am a vegetarian who eats quite healthy and clean. (I do enjoy dairy though: mainly greek yogurt, I only drink almond milk/soy milk)

    So maybe try almond milk or soy? With an organic breakfast cereal. There are a lot to choose from.

    I also eat a lot of dry roasted almonds.
    Salads with strawberries, almonds, spinach and other vegetables.

    Assembly type meals may work for you:

    You can buy a store made rotisserie chicken, pair that with some steamed vegetables that are fresh or frozen (microwave works well).

    Salads are nothing but assembly. Not just green salads, but pasta salads with lots of vegetables tossed in, quinoa salads, wild rice salads, bean based salads (e.g. cowboy caviar).

    Do you have a Trader Joes near you? They have loads of different pre-marinated meat you can just bake or slap on a grill.

    Breakfast for dinner- load up an omelet with vegetables.
