Kid friendly recipes

I have a very picky family! I would love to get some simple (not to many ingredients/not too time consuming) recipes that are healthy and not too high in calories. I work full time and hate cooking! I have a hard time getting my family to eat veggies, too, but I really need to integrate them more into our meals. It would be nice for me to not have to prepare something different for myself from what the rest of the family is having. If you have a good recipe to share with me, please bring it on!

    I did look at the crockpot recipes that a lot of you posted and got some good ideas.

    I will search for some in my book. There are tons of easy to do recipe that are low in calories and loaded with healthy veggies, protein and sweet - but not to the point of being bad.

    Low-Fat Macaroni and Cheese Recipe


    Nutritional Info (Per serving): 6 servings
    Calories: 203, Saturated Fat: 1g, Sodium: 331mg, Dietary Fiber: 1g, Total Fat: 3g, Carbs: 28g, Sugars: 6g, Cholesterol: 14mg, Protein: 16g
    Ingredients
    • 3/4 cup(s) milk, fat-free evaporated
    • 1 cup(s) cottage cheese, low-fat
    • 1/2 cup(s) cheese, ricotta, low-fat
    • 1/2 cup(s) cheese, cheddar, low-fat
    • 1/2 teaspoon nutmeg, ground
    • 1 dash(es) salt and black pepper, to taste
    • 1 teaspoon cheese, Parmesan
    • 1 tablespoon bread crumbs, fine, dry
    • 1 pounds pasta, elbow macaroni, cooked
    Preparation
    1. Preheat the oven to 350 degrees. Heat the milk in a saucepan over low heat. Add the cheeses until they melt, stirring constantly.
    2. Stir in the nutmeg, pepper, and salt. Remove the cheese sauce from the heat. Add the cooked pasta to the cheese sauce and mix well.
    3. Pour the mixture into a 2-quart casserole dish. Sprinkle with Parmesan cheese and bread crumbs. Bake the casserole for 15-20 minutes until bubbly and the top is browned.

  • One of the BEST cookbooks I found (because I am in the same predicament with finding foods the kids will eat), is called DECEPTIVELY DELICIOUS by Jessica Seinfeld. She uses pureed vegetables in everything, so you get the health benefits and taste at the same time! I haven't found anything yet that the kids don't devour!! BTW, the recipe for brownies is DELISH!!! (It uses pureed spinach, which you would NEVER KNOW!)---I even fooled my husband with that one! She has two books out, but I think the 1st is better....but seriously, this a MUST invest in this cookbook!

    Thanks you all! My Mom has that book Deceptively Delicous and I forgot about it. Will have to borrow from her! I've heard about skinnytaste.com. Will have to check that out. Have a great day!
