Tex Mex Turkey Skillet

One of my go-to faves when I'm craving spicy mexican food...and my dinner a few moments ago! I never make it the same way since I just throw in whatever veggies I have in the fridge, but here is my base recipe.

20oz package ground turkey 93/7
1/2 onion diced
1/2 red bell pepper
2 Tbsp chili powder (i just eyeball it)
1 tbsp cumin
2 cloves garlic minced
15oz can black beans
1 cup favorite salsa (I've also used 15oz can Rotel tomatoes - yummy & spicy)
1 cup frozen corn
Salt & Pepper to taste
Fresh cilantro

In skillet add turkey, onion, chili powder, cumin. Cook til turkey is no longer pink. Add garlic and bell pepper, cook til pepper is slightly softened. Add salsa or Rotel and cook til liquid is mostly absorbed. Add black beans and frozen corn and cook til warmed through. Salt & pepper to taste. Add fresh chopped cilantro before serving.

Super easy, 20 minute dish that is delicious alone, or with some baked Scoops tortilla chips.

Calorie count will vary based on brands/veggies. 4 servings, about 1 1/3 cups: 354 calories, 11g fat, 34g protein, 3g sugar, 29g carb, 7g fiber
