So I recently watched some of Fat, Sick & Nearly Dead - quite a story if you're interested.

I thought it would be great if I could replace one meal a day with freshly juiced vegetables and juice but anyone have any idea how I should track that in my food diary?

Last night we made juice with strawberries, banana, carrots, apples, pear and kale (FYI - kale has some of hte highest levels of micronutrients ever) ... it was yummy and very filling!!! But i have no idea how to track this...

I switched from a juicer to a power blender* and started making green smoothies (dark leafy greens plus fruit) instead. This provides you with some of the fiber from the foods, which helps you feel fuller, etc. With this method I log the whole food. So if I use an apple, I log an apple. With apple juices, I don't know. I guess search apple juice, carrot juice, etc and use those.

    * I use a BlendTec but Vitamix is a well-known brand. They're expensive but oh, so worth it! The BlendTec has a usage counter. Mine's up to over 150 and I got it last November! $400 / 150 = $2.67 per usage, and falling. Not a bad deal when you pay more than that at a smoothie store. Of course, some of those uses are for other recipes like soups, batters, and sauces.
