PCOS friendly recipes for lunch/dinner?

My lunch during my work week is almost always the same--a giant green salad with a protein of some kind. On my days off, I usually have fish or shrimp and a green veggie with a small salad. It sounds boring, but with changing up dressings and proteins, it stays fresh.
I've been doing this since last Nov. Now, if I miss more than 2 days of having a salad, I begin to CRAVE green stuff. It's crazy--because this time last year, I might have had 2-3 green veggies per week. Now, I have that or more each day.
For dinner, I aim for a low-carb main dish (many come from the two books below), and at least two veggies with one being green. A few times a week, I have whole grain rice or pasta. But, I've cut all other breads and pastas completely.

I was also wondering is it best to have low carbs for lunch or dinner? And with fruits containing natural sugars is there a certain time of day where it'd be best to have them?0 -
