my muscles get soft when Im not working out :(. Is it just the fat or are the muscles generally just soft without the pumps?

I lifted heavy last night, and my biceps are like rocks this morning. OUCH.

What I hate about heavy lifting is not being able to lift my arms to wash my hair afterwards. LOL

Combine maximal strength lifting with regular strength lifting.

    Just an example...
Bench Press - Maximal Strength (heavy) 3 - 5 reps
Dumbell Press - moderately heavy 8-10 reps
Tricep exercise of some kind... 8-12 reps
Rear delt and Lat exercise 8-12 reps

I love it too. I even love having arms like rocks, and not being able to wash my hair, but it's a love/hate thing.

Im on a < 50g carbs/day diet (started REAL PSMF today - since the last week i've been eating 1600 cals - too much) - could that affect my muscle tone.

Yeah, you probably don't maintain much glycogen storage so your muscles will likely look a little flat. Doesn't mean you haven't experienced strength improvements though. Are you sure 1,600 calories is enough for you? How tall, heavy, and what's your bodyfat? You may consider cycling your carbs more than just a straight low-carb. Lifting days would be more carbs, maybe 40% and non-lifting days maybe 10%-15%. Just a thought...
