Chicken Lettuce Wraps

I just saw this recipe being prepared on Paula Deen's foodnetwork show- yes, you heard that right, Paula Deen. She had a guest chef on named Daniel Green. I'm definately going to try these and wanted to share.

Chinese Chicken Lettuce Wraps

1 lb. sh*take mushrooms, chopped
1 tsp. EVOO
1/2 large onion, chopped
2 lbs lean ground chicken
2 tbsp rice wine vinegar
1 tbsp sesame oil
1 garlic clove, chopped
6 scallions, sliced thinly
Lettuce leaves (your choice- I like radicchio)

Add all ingredients to a non-stick skillet (except scallions and lettuce.) Cook ingredients until chicken is done. Add scallions.
Scoop into lettuce leaves.

Fat: 11
Sat Fat: 3
Cholesterol: 80
Sodium: 379

    Same here on the 'shrooms. I may substitute water chestnuts for crunchiness.

    The original recipe actually called for water chestnuts, but I can't stand the things, which is why I left it out when I wrote it down. :tongue: So go nuts on 'em!

    I've made it twice now, and it's great. It's officially in our weeknight dinner rotation b/c you will want to use up the ingredients you bought...you can pretty much just buy ground chicken and all different kinds of wraps (boston, radicchio, etc) each week.

    TIPS: don't worry about the low amount of oil used. Once you add the mushrooms, they will add moisture to the mixture. It all comes together, just have faith in the recipe. And Rice Wine Vinegar in your local store will be found in the Asain aisle, kind I used was Mirin (p.s. i use whatever mushrooms grocery store stocks, usually baby bellas aka crimini) ****ake's usually cost more.
