Any Healthy, easy Eggplant recipes???

I am making something with Eggplant in it on Friday.... What i usually make is not very healthy, so I am looking for some recipes..

    chop ckunky the eggplant, celery, onions, can of stewed tomatoes, mushrooms if u have them, minced garlic, cumin and dried basil. cover and simmer till veggies are tender. i like to serve with a little cracked wheat, and some imitation ground meat. dollop of yogert on top. had it for dinner tonite. it was goooood.

    skinnytaste.com has a egglant parm. recipe that is so so so good. I have made it twice now.

    My cousin makes this dish....

    2 eggplant about 1 lb washed
    1/4 c lemon juice
    1/4 c olive oil (or less)
    1/4 c chopped parsley
    2 pieces garlic (crushed)
    black pepper

    1.~ Preheat oven to 400, place eggplants on cookie sheet for 40 mins or until soft
    2.~ Remove from oven and let cool, then remove stalks from eggplant
    3.~ Puree eggplant in processor with lemon juice, oil, parsley & garlic OR; ~ Chop eggplants very finely by hand & mash then mix with the other ingredients
    4.~ Season to taste!
